Versatile Brioche Dough




Brioche

a very versatile enriched bread, you can make donuts, bread, and cinnamon rolls, out of it!


ingredients

yeast 10g
milk 70g
bread flour 500g
sugar 60g
salt 15g
eggs 5
soft butter 265g

method

combine yeast, milk, sugar and salt together. Add in the bread flour and start the mixer with a hook attachment from low to medium speed gradually. then add in the eggs one at a time till its fully incorporated. here we want gluten to form, so allow the machine to go on full speed.
when its ready, add in the soft butter gradually till its incorporated. batter may appear to be sticky, but keep going a thigh speed till it does not stick to the side of the bowl.

then cling wrap the dough tightly and allow it to proof.
shape them out into whatever you want to make and proof it again before frying/baking.
