Chocolate Mud Cake




Another rich and great recipe for stacking. This is your classic chocolate cake. Should you require it to be richer, add in 2 cups of chocolate chips in the batter before baking.



Chocolate Mud Cake
4 eggs
226g butter
400g caster sugar
350g plain flour
4tsp vanilla essence
100g cocoa powder
1.5 cup of water


Method
1)      Preheat oven to 180 degrees C and place oven rack in the center of the oven. Prepare 3 x 6 inch cake pans. Then line the bottoms of the pans with baking paper.
2)   Dissolve cocoa powder in hot boiling water in a bowl.
2)      Beat sugar and butter till light and fluffy. Add eggs 1 at a time
3)      In another large bowl, sift flour and baking powder.
4)      Add the dry (flour) and wet (cocoa) ingredients alternatingly till smooth and free of lumps
5)      Evenly divide the batter between the 3 pans and bake for about 27 - 32 minutes or until a toothpick inserted into the center of the cake just comes out clean. 

6)      Remove from oven and let cool on a wire rack for about 10 minutes. Then remove the cakes from their pans and cool completely on wire rack before frosting.


Chocolate Ganache
Dark chocolate 1:4 ratio
White Chocolate 1:3

250g dairy cream
1KG coverture chocolate
