Lychee Mango Cake
SPONGE
4 Eggs
250g Sugar
240g Milk
112g Melted butter/Vegetable Oil
1tsp Lychee extract
260g Plain flour
2tsp Baking powder
1/4tsp Salt
*optional Food coloring
1. Beat eggs and sugar on high speed till ribbon stage.
2. Sift in all dry ingredients.
3. Add hot milk, butter and extract. Make a liason with the batter.
4. Bake at 180 degrees for 15-20 mins
MANGO CUSTARD
100g Sugar
62ml mango puree
2 egg yolks
1/2 tsp corn starch
50g butter
1. Add all ingredients except butter in a pot and bring to a boil, whisk constantly
2. Whisk in butter
MANGO BUTTERCREAM
6 egg whites
200g sugar
624g butter
1/4-1/2 cup mango puree
