White Vanilla Cake





This is a great cake recipe for stacking. It is a hybrid of sponge and butter cake. Makes it really stable and strong for stacking with minimal round tips after baking.


White Vanilla Cake

3 eggs
170g butter
300g caster sugar
263g cake flour
3 tsp baking powder
1.5 tsp vanilla
180ml milk


Method
1)      Preheat oven to 180 degrees C and place oven rack in the center of the oven. Prepare 3 x 6 inch cake pans. Then line the bottoms of the pans with baking paper.
2)      Beat sugar and butter till light and fluffy. Add eggs 1 at a time
3)      In another large bowl, sift flour and baking powder.
4)      Add the dry (flour) and wet (milk) ingredients alternatingly till smooth and free of lumps
5)      Evenly divide the batter between the 3 pans and bake for about 27 - 32 minutes or until a toothpick inserted into the center of the cake just comes out clean. 

6)      Remove from oven and let cool on a wire rack for about 10 minutes. Then remove the cakes from their pans and cool completely on wire rack before frosting.
